This is the German version of the Swiss Emmentaler cheese. It is a hard cheese with a natural rind, a firm texture and a mild nutty flavour. This cheese is comparatively milder than its Swiss counterpart. The Maturation period is at least 3 months. The hard cheese speciality is traditional ly made of 100% raw cows’ milk from the Allgäu region, in Bavaria, Germany. This guarantees its protected designation of origin, that a genuine Allgauer Emmentaler permitted to display.
