From the Burgundy region of France, Trou Du Cru is a pungent washed rind cheese, a distinctive category of gloriously stinky curd and a ripening technique first discovered by monks. It is a 60g miniaturised version of famous Epoisses, the smallest cheese in the world, produced since the early 1960s by Robert Berthaut. Washed in Marc de Bourgogne, a strong local alcohol, 2 to 3 times per week for 3 weeks, this little cows’ milk cheese imparts big bold flavours, supple texture and pungent aromas.

It developed a gorgeous bright orange-red wrinkled rind and an extremely luscious and creamy ivory yellow paste this is rich with a slight smoky flavour overlaid with savoury floral notes that melts in the mouth.
